36. Low carb burger in a bowl recipe

Recipe time!

And since this has been such a fan favorite, I'll share it with you!


What you'll need:


1 pkg of ground meat of your choice.

1 large diced onion, reserve 1/4 for sauce.

1 small head of cabbage sliced thin.

Bacon fat or olive oil.

Nutritional yeast.

Shredded cheese - I prefer vegan shreds by Earth Island brand on occasion but cheese can be omitted on dairy free diet.


Sauce:

1 dill pickle.

1/4 of a finely diced onion.

1/4 cup of sugar free ketchup (I use the version with stevia instead of sucralose).

1/2 cup of mayonnaise (I use a low-carb, vegan mayonaise).


Instructions:


Cook ground meat in a skillet, using generous amounts of bacon fat or olive oil and adding salt and pepper generously to taste.

While meat is browning, slice cabbage in half lengthwise, removing the outer leaves, and then slicing into thin strips and cut up onion if using.


When meat is browned, toss in the finely chopped cabbage and onion, adding more oil, salt and pepper and turning it well as it softens and cooks all over.


Make the sauce while the cabbage is cooking by blending the sauce ingredients together, finely chopping the pickle and onion and folding it into the ketchup and mayonnaise. This sauce is so easy to make, you could easily make more than this.


Continue until cabbage is desired texture, wilted and slightly transparent over medium heat while adding some cheese shreds, making sure to mix well just until the cheese is melted.


Remove from heat and mix in nutritional yeast.


Serve the hot melty meat & veggie mixture in a bowl, topped with sauce.

Add more sliced pickles if desired.


So fast and easy!
